Cheesy Chicken Fajita Pasta Delight

Ingredients:

  • 3 chicken breasts, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 pack fajita mix
  • 5 cups milk
  • 4 cups penne pasta
  • 1 cup pepper jack cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional, for serving)

Instructions:

1. Marinate the Chicken:

  • In a bowl, combine diced chicken with half of the fajita mix seasoning. Toss well to coat the chicken evenly. Let it marinate for at least 15 minutes.

2. Cook the Pasta:

  • Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

3. Sauté the Vegetables:

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced red, green, and yellow bell peppers, and the onion. SautĂ© until the vegetables are tender and slightly caramelized, about 5-7 minutes. Remove the sautĂ©ed vegetables from the skillet and set aside.

4. Cook the Chicken:

  • In the same skillet, add another tablespoon of olive oil. Add the marinated chicken and cook until it’s browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

5. Prepare the Fajita Sauce:

  • In the same skillet, pour in the milk and the remaining half of the fajita mix seasoning. Stir well to combine and let it simmer over medium heat until the sauce thickens slightly, about 3-4 minutes.

6. Combine Pasta, Vegetables, Chicken, and Sauce:

  • Add the cooked pasta, sautĂ©ed vegetables, and cooked chicken back into the skillet with the fajita sauce. Stir everything together until well combined. Season with salt and pepper to taste.

7. Add Cheese:

  • Sprinkle the shredded pepper jack cheese over the pasta mixture. Cover the skillet and let it sit for a couple of minutes until the cheese melts and becomes gooey.

8. Serve:

  • Garnish the cheesy chicken fajita pasta with freshly chopped cilantro. Serve hot, with a dollop of sour cream on top if desired.
