Cabbage Patch Soup with a Twist

Ingredients:

  • 1 pound ground beef, cooked
  • 2 cans (10 ounces each) Rotel tomatoes
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 small can (8 ounces) chopped tomatoes
  • 1 tablespoon Italian seasoning
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • Salt and pepper, to taste
  • 3-4 cups chopped cabbage
  • Cooked pasta (optional)

Instructions:

  1. In a large slow cooker, combine the cooked ground beef, Rotel tomatoes, chopped onion, beef broth, chopped tomatoes, Italian seasoning, and cannellini beans. Season with salt and pepper to taste.
  2. Stir the ingredients together until well combined.
  3. Set the slow cooker to low heat and cook for about 5 hours.
  4. After 5 hours, add the chopped cabbage to the slow cooker.
  5. Continue cooking on low heat for an additional 1-2 hours, depending on your preference for the crispness of the cabbage. If you prefer softer cabbage, cook for the full 2 hours.
  6. If desired, add cooked pasta to the soup during the last 30 minutes of cooking, stirring to combine.
  7. Once the cabbage is cooked to your liking, adjust the seasoning if necessary.
