Cheesy Frito Taco Casserole

Ingredients:

  • 1 bag of Fritos (11 oz)
  • 2 lb ground beef
  • 2 packets taco seasoning
  • 1 small bag Mexican shredded cheese (about 2 cups)
  • Sour cream and refried beans (optional, for serving)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Beef: In a large skillet, cook the ground beef over medium heat until it’s browned and cooked through. Drain off any excess grease.
  3. Season the Beef: Once drained, add the taco seasoning packets to the cooked ground beef according to the instructions on the packet. Stir well to combine, ensuring the beef is evenly coated with the seasoning.
  4. Layer the Casserole: In a 9×13 inch baking dish, spread a layer of Fritos evenly across the bottom. Next, spread the seasoned ground beef over the Fritos, creating an even layer.
  5. Add Cheese: Sprinkle the shredded Mexican cheese evenly over the ground beef layer, covering it completely.
  6. Repeat Layers: Repeat the layering process with another layer of Fritos, followed by the remaining seasoned ground beef, and finish with another layer of shredded cheese.
  7. Cover and Bake: Cover the baking dish with foil, ensuring it’s tightly sealed around the edges to trap steam. Place the casserole in the preheated oven and bake for about 15-20 minutes, or until the cheese is completely melted and bubbly.
  8. Serve: Once the cheese is melted, remove the casserole from the oven. Serve hot, garnished with a dollop of sour cream and a side of refried beans if desired.
