Sloppy Joe Baked Potatoes
Ingredients:
- Russet potatoes (1 per serving)
- Butter, unsalted
- Shredded Colby cheese
- Sloppy Joe meat (using canned Sloppy Joe or Manwich sauce)
- Salt and pepper, to taste
- Optional toppings: sliced green onions, sour cream, chopped fresh parsley
Instructions:
1. Prepare the Baked Potatoes:
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes thoroughly under running water to remove any dirt.
- Pat the potatoes dry with a paper towel.
- Prick the potatoes several times with a fork or knife to allow steam to escape during baking.
- Rub each potato with a little bit of olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack or on a baking sheet lined with foil.
- Bake the potatoes for 45-60 minutes, or until they are tender when pierced with a fork.
2. Prepare the Sloppy Joe Meat:
- While the potatoes are baking, prepare the Sloppy Joe meat according to the instructions on the canned sauce. Typically, this involves browning ground beef in a skillet, draining excess fat, and then adding the sauce to simmer until heated through.
3. Assemble the Sloppy Joe Baked Potatoes:
- Once the potatoes are baked, remove them from the oven.
- Carefully make a slit lengthwise in the center of each potato, fluffing up the insides with a fork.
- Add a pat of butter into each potato and season with salt and pepper to taste.
4. Add Sloppy Joe Meat:
- Spoon a generous portion of the prepared Sloppy Joe meat over each potato, allowing it to seep into the fluffy interior.
5. Add Colby Cheese:
- Sprinkle a generous amount of shredded Colby cheese over the hot Sloppy Joe meat. The heat from the meat and potatoes will melt the cheese beautifully.
6. Optional Toppings:
- If desired, garnish the Sloppy Joe Baked Potatoes with sliced green onions, a dollop of sour cream, and a sprinkle of chopped fresh parsley.
