Smoked Sausage and Roasted Vegetables

This was fun! Smoked sausage, frozen corn, bag o carrots and baby taters. 400 for about an hour. I was shocked that everything was done and nothing burned! I used Blackstone Steakhouse seasoning for everything. It’s my fav! This fed the 3 of us with leftovers.

Smoked Sausage and Roasted Vegetables

Ingredients:

  • 1 pound smoked sausage, sliced into rounds
  • 2 cups frozen corn kernels
  • 1 pound baby carrots, whole or halved if large
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 2-3 tablespoons Blackstone Steakhouse seasoning (or your favorite seasoning blend)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Vegetables: In a large mixing bowl, combine the sliced smoked sausage, frozen corn, baby carrots, and baby potatoes.
  3. Season and Coat: Drizzle the olive oil over the mixture and toss to coat all the ingredients evenly. Sprinkle the Blackstone Steakhouse seasoning, salt, and pepper over the mixture. Toss again to ensure everything is well seasoned.
  4. Arrange on a Baking Sheet: Line a large baking sheet with parchment paper or foil for easy cleanup. Spread the seasoned sausage and vegetable mixture in a single layer on the baking sheet.
  5. Roast in the Oven: Place the baking sheet in the preheated oven and roast for about 45 minutes to 1 hour, or until the vegetables are tender and slightly caramelized, and the sausage is cooked through. You can toss the mixture once or twice during roasting to ensure even cooking.
  6. Serve: Remove the baking sheet from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley, if desired. Serve the smoked sausage and roasted vegetables hot, and enjoy your delicious and easy meal!
