Super quick and easy dinner idea.
1 pound smoked sausage, sliced
2 pound russet potatoes peeled and chopped
1 can cream of mushroom
1 cup of milk
Mix soup and milk fully then add over potatoes and sausage. Quick stir
Cook on low 6 hours
I added onion powder but you can use a regular onion instead. I just didn’t have one on hand

Creamy Sausage and Potato Slow Cooker Casserole


  • 1 pound smoked sausage, sliced
  • 2 pounds russet potatoes, peeled and chopped
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon onion powder (or 1 small onion, finely chopped)
  • Salt and pepper to taste
  • Optional: Chopped fresh parsley for garnish


  1. Prepare Ingredients:
    • Slice the smoked sausage into rounds.
    • Peel and chop the russet potatoes into bite-sized pieces.
    • If using a fresh onion, finely chop it.
  2. Mix Soup and Milk:
    • In a bowl, whisk together the cream of mushroom soup and milk until well combined.
  3. Layer Ingredients in Slow Cooker:
    • Place half of the sliced smoked sausage at the bottom of the slow cooker.
    • Add half of the chopped potatoes on top of the sausage.
    • Sprinkle half of the onion powder (or chopped fresh onion) over the potatoes.
    • Pour half of the soup and milk mixture evenly over the layers.
    • Repeat the layers with the remaining sausage, potatoes, and onion powder (or fresh onion).
    • Finish by pouring the remaining soup and milk mixture over the top.
  4. Quick Stir:
    • Gently stir the ingredients in the slow cooker to ensure an even distribution of flavors.
  5. Season:
    • Season the mixture with salt and pepper to taste. Remember that the smoked sausage may add some saltiness, so adjust accordingly.
  6. Cook on Low:
    • Set the slow cooker to low heat and cook for approximately 6 hours, or until the potatoes are tender and the flavors have melded.
  7. Serve:
    • Once cooked, give the casserole a final stir and taste for seasoning adjustments.
    • Spoon the creamy sausage and potato casserole into serving bowls.
  8. Garnish (Optional):
    • Garnish with chopped fresh parsley for a burst of color and freshness.
  9. Enjoy:
