One-Pot Cheesy Chicken Veggie Pasta

Ingredients:

  • 1 box (16 oz) of your favorite pasta (spaghetti, penne, or rotini work well)
  • 1 small bag (about 12 oz) of frozen mixed vegetables
  • 1-2 tablespoons of butter
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley (or fresh if available)
  • 1 can (12.5 oz) of cooked and shredded chicken (or leftover rotisserie chicken, or 1 cup of cooked and shredded frozen chicken)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)

Instructions:

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until it’s about halfway done.
  2. Add the frozen mixed vegetables to the boiling pasta and continue cooking according to the pasta package instructions until both pasta and vegetables are tender. This usually takes about 8-10 minutes.
  3. Drain the pasta and vegetables and return them to the pot.
  4. Add 1-2 tablespoons of butter to the pot and stir until the butter is melted and coats the pasta and vegetables.
  5. Season with salt, pepper, garlic powder, and dried parsley. Adjust the seasonings to taste.
  6. Add the cooked and shredded chicken to the pot and mix well to combine.
  7. Sprinkle the shredded cheese over the top of the pasta and chicken mixture. Put the lid on the pot and let it sit for a couple of minutes to allow the cheese to melt.
  8. Gently stir the pasta, ensuring the cheese is evenly distributed and the chicken is warmed through.
