EASY cheesy chicken, broccoli, & rice

2 boneless chicken breast
1 head of broccoli
1 package of knorrs rice (your choosing)
Shredded cheese

Cut up chicken & broccoli, add a little oil, throw on the stove and season (I used lemon pepper, paprika, garlic & onion seasoning) Make rice separately per package instructions. When rice & chicken are done, put rice in same dish as chicken and broccoli. Add shredded cheese and stir.

Cheesy Chicken, Broccoli, and Rice Skillet

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head of broccoli, cut into florets
  • 1 package of Knorr’s rice (your choice of flavor)
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend of your choice)
  • 2 tablespoons olive oil
  • 1 teaspoon lemon pepper seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Rice: Follow the instructions on the Knorr’s rice package to cook the rice. Set aside once done.
  2. Cook Chicken and Broccoli:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the chicken pieces to the skillet. Season with lemon pepper, paprika, garlic powder, onion powder, salt, and pepper. Cook until the chicken is no longer pink in the center, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
    • In the same skillet, add another tablespoon of olive oil. Add the broccoli florets and sautรฉ for about 3-4 minutes, or until they are bright green and slightly tender. Remove from heat.
  3. Combine Chicken, Broccoli, and Rice:
    • Add the cooked rice to the skillet with the broccoli. Mix well to combine.
    • Return the cooked chicken to the skillet, combining it with the rice and broccoli.
  4. Add Cheese:
    • Sprinkle the shredded cheese over the chicken, broccoli, and rice mixture while it’s still hot.
    • Cover the skillet with a lid and let it sit for a few minutes, allowing the cheese to melt and become gooey.
  5. Serve:
    • Once the cheese has melted, gently stir the cheesy chicken, broccoli, and rice mixture to evenly distribute the cheese.
    • Taste and adjust the seasoning if necessary.
    • Garnish with fresh chopped parsley, if desired.
