Davy Crockett Sandwich

Ingredients:

  • 1 lb ground beef
  • 1/2 white onion, chopped
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 4 oz Velveeta cheese, cubed
  • Salt and pepper to taste
  • 1 can (10.5 oz) cream of mushroom soup
  • Minced garlic (optional)
  • 6-7 hamburger buns, toasted

Instructions:

  1. In a large skillet, brown the chopped onion (and minced garlic, if using) over medium heat until softened.
  2. Add the ground beef to the skillet with the onions and cook until browned, breaking it up with a spatula as it cooks.
  3. Once the beef is browned, drain any excess grease or water from the skillet.
  4. Stir in the can of Rotel tomatoes with green chilies, including the liquid. Cook for a few minutes until heated through.
  5. Add salt and pepper to taste.
  6. Add the cubed Velveeta cheese to the skillet and stir until melted and well combined with the beef mixture.
  7. Pour in the cream of mushroom soup and stir until everything is evenly coated and heated through.
  8. Remove the skillet from the heat.
  9. Toast the hamburger buns until golden brown.
  10. Spoon the hearty Davy Crockett mixture onto the bottom halves of the toasted buns.
  11. Place the top halves of the buns over the filling to complete the sandwiches.
