Strawberry Cobbler

 

Strawberry Cream Cheese Cobbler Recipe:

Ingredients:

1 stick (1/2 cup) butter
1 egg, lightly beaten
1 cup milk
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 quart whole strawberries, washed, capped, and quartered
2 ounces cream cheese, cut into small pieces
Instructions:

Preheat Oven:

Preheat your oven to 350˚F.
Prepare the Skillet:

Melt the butter and pour it into a 10″ cast iron skillet.
Mix the Batter:

In a small bowl, combine the lightly beaten egg, milk, flour, sugar, baking powder, and salt. Mix well until you have a smooth batter.
Pour Batter into Skillet:

Pour the batter directly over the melted butter in the skillet. Do not stir. The batter will create a delicious crust.
Add Strawberries:

Arrange the quartered strawberries over the batter. Try to create a single layer as much as possible.
Sprinkle Cream Cheese:

Sprinkle the small pieces of cream cheese evenly over the strawberries.
Bake:

Place the skillet in the preheated oven and bake for approximately 45 minutes. The top should be golden brown, and the edges should be bubbling.
Check for Doneness:

To check if it’s done, insert a toothpick into the crust part (not the fruit) – it should come out clean or with a few moist crumbs.
Serve:

Allow the cobbler to cool slightly before serving. The crust will rise up and around the fruit, creating a delicious combination of textures.
