Homemade Frozen Breakfast Sandwiches
Ingredients:
- 12 large eggs
- 12 pork sausage patties
- 12 slices of cheese (cheddar or American)
- 12 English muffins
- Olive oil
- Salt and pepper
Instructions:
- Prepare the Eggs:
- Preheat your oven to 350°F (or 375°F for convection).
- Lightly grease muffin tin molds with olive oil.
- Crack one egg into each mold.
- Season with salt and pepper to taste.
- Bake for 17 minutes, or until the eggs are set. If you prefer a runny yolk, reduce the baking time accordingly.
- Cook the Sausage Patties:
- While the eggs are baking, cook the pork sausage patties according to package instructions. If using Kroger brand, you can bake them in the oven on a sheet pan.
- Assemble the Sandwiches:
- Once the eggs and sausage patties are cooked, begin assembling the sandwiches.
- Split the English muffins and lightly toast them if desired.
- On the bottom half of each English muffin, place a cooked egg, followed by a sausage patty, and a slice of cheese.
- Freeze the Sandwiches:
- Allow the assembled sandwiches to cool completely.
- Once cooled, wrap each sandwich individually in plastic wrap or aluminum foil.
- Place the wrapped sandwiches in a freezer-safe bag or container.
- Reheating Instructions:
- When ready to eat, remove the desired number of sandwiches from the freezer.
- Unwrap the sandwich and place it on a microwave-safe plate.
- Microwave wrapped in a paper towel for 1 minute and 30 seconds, or until heated through.
