Simple Poor Man’s Supper

Ingredients:

  • 1 lb ground beef (hamburger)
  • Desired amount of potatoes, peeled and sliced into cubes
  • 1 can (15.25 oz) sweet corn, drained
  • Salt and pepper to taste
  • Optional: additional seasonings like garlic powder, onion powder, paprika, etc.
  • Cooking oil for frying

Instructions:

  1. Prepare the Potatoes:
    • Heat some cooking oil in a skillet over medium-high heat.
    • Add the cubed potatoes to the skillet in a single layer, ensuring they’re not overcrowded. You may need to cook them in batches.
    • Fry the potatoes until they’re golden brown and crispy on the outside, stirring occasionally to ensure even cooking. This should take about 10-15 minutes.
    • Once done, transfer the fried potatoes to a plate lined with paper towels to drain any excess oil. Season with salt and pepper to taste, and any other desired seasonings.
  2. Cook the Ground Beef:
    • In the same skillet, add a bit more oil if needed and add the ground beef.
    • Break up the meat with a spatula and cook it over medium-high heat until it’s browned and cooked through, usually about 8-10 minutes.
    • Season the ground beef with salt, pepper, and any additional seasonings you prefer, such as garlic powder or onion powder.
  3. Combine:
    • Once the ground beef is cooked, add the fried potatoes back into the skillet with the beef.
    • Pour in the drained sweet corn and gently mix everything together until evenly combined.
    • Allow the mixture to cook together for another 2-3 minutes, just to heat through and let the flavors meld.
  4. Serve:
    • Once everything is heated through and well combined, transfer the Poor Man’s Supper to a serving dish.
    • Serve hot, either as is or with your choice of condiments or sides.
