Savory Kielbasa and Potato Bake

Ingredients:

  • 1 package of kielbasa (approximately 14 oz), sliced
  • 2 cans (14.5 oz each) cut green beans, drained
  • 3-4 medium potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat your oven to 400Β°F (200Β°C).
  2. In a large mixing bowl, combine the sliced kielbasa, drained green beans, and diced potatoes.
  3. Drizzle the olive oil over the mixture and sprinkle with garlic powder, salt, black pepper, and red pepper flakes (if using). Toss well to coat all ingredients evenly.
  4. Transfer the mixture to a baking dish, spreading it out into an even layer.
  5. Cover the baking dish with aluminum foil, ensuring it’s tightly sealed around the edges to trap steam.
  6. Place the covered baking dish in the preheated oven and bake for 40 minutes.
  7. After 40 minutes, carefully remove the foil from the baking dish and give the mixture a gentle stir.
  8. Return the uncovered dish to the oven and bake for an additional 10-15 minutes or until the potatoes are tender and lightly browned, and the kielbasa is cooked through.
  9. Once done, remove from the oven and let it cool for a few minutes.
  10. Serve the savory kielbasa and potato bake hot, garnished with fresh chopped parsley if desired.
