Cheesy Appalachian Potato Cakes


  • 2 cups leftover mashed potatoes
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish
  • Optional: sour cream or syrup and butter for serving


  1. Prepare the Mixture:
    • In a mixing bowl, combine the leftover mashed potatoes, egg, flour, shredded cheese, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. Form the Potato Cakes:
    • Heat a non-stick skillet or griddle over medium heat.
    • Take a small handful of the potato mixture and form it into a patty shape, about 1/2 inch thick. Repeat with the remaining mixture, forming as many potato cakes as desired.
  3. Cook the Potato Cakes:
    • Place the potato cakes onto the preheated skillet or griddle, cooking them in batches if necessary.
    • Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  4. Serve:
    • Once cooked, remove the potato cakes from the skillet and place them on a serving plate.
    • Garnish with chopped green onions if desired.
    • Serve hot with a dollop of sour cream on top, or if preferred, with syrup and butter for a sweet twist.
