•1 lb ground beef
•2 16 oz blocks of Velveeta (I used one white one regular)
•can of rotel (I used two)
•1 box of penne pasta

Cook the pasta according to box instructions. Season and brown the ground beef. I used slap ya mama, garlic powder, onion powder, and a little cayenne pepper. Drain grease if necessary. Add the rotel to the meat. Cube the Velveeta and add to the mixture. Once melted add the cooked, drained pasta. You can add a little milk if it’s too thick but I didn’t. Stir and enjoy! Rotel Pasta Delight

  • 2 cans of Rotel tomatoes and green chilies
  • 1 box of penne pasta
  • Slap Ya Mama seasoning
  • Garlic powder
  • Onion powder
  • Cayenne pepper
  • Optional: Milk (for adjusting consistency)

Instructions:

  1. Cook the Pasta:
    • Boil the penne pasta according to the instructions on the box until al dente.
    • Drain the pasta and set aside.
  2. Season and Brown the Ground Beef:
    • In a large skillet over medium heat, add the ground beef.
    • Season with Slap Ya Mama, garlic powder, onion powder, and a pinch of cayenne pepper to taste.
    • Brown the beef, breaking it into crumbles as it cooks.
    • If there’s excess grease, drain it.
  3. Add Rotel:
    • Stir in the cans of Rotel tomatoes and green chilies to the seasoned ground beef.
    • Allow the mixture to simmer for a few minutes to let the flavors meld.
  4. Incorporate Velveeta:
    • Cube both blocks of Velveeta and add them to the skillet with the meat and Rotel.
    • Stir occasionally until the Velveeta is completely melted and forms a creamy sauce.
  5. Combine with Pasta:
    • Once the cheese is melted, add the cooked and drained penne pasta to the skillet.
    • Gently fold the pasta into the cheesy meat mixture until well coated.
  6. Adjust Consistency (Optional):
    • If the mixture seems too thick, you can add a splash of milk to achieve your desired consistency.
  7. Serve and Enjoy:
    • Stir everything together well, ensuring the pasta is evenly coated with the cheesy goodness.
    • Serve immediately, and enjoy your Rotel Pasta Delight!
