Grandson’s Poor Man’s Stew

Ingredients:

  • 1 lb ground beef, browned ($1.99)
  • 3 large potatoes, cut into large cubes ($1)
  • 4 large carrots, cut into 1-inch pieces ($0.40)
  • 3 celery stalks, cut into 1-inch pieces ($0.25)
  • 1 onion, cut into large cubes ($0.25)
  • 1 can of fried roasted tomatoes ($1.50)
  • Frozen cut green beans ($1.25)
  • 1 box of broth ($2.25)
  • Salt and pepper, to taste

For serving:

  • Brown and serve rolls ($0.99)
  • Tossed salad:
    • Lettuce ($0.99)
    • Tomato ($0.75)

Total estimated cost: $11.37

Instructions:

  1. Prepare Ingredients:
    • Brown the ground beef in a large pot over medium heat. Season with salt and pepper to taste.
    • While the beef is browning, prepare the vegetables: cut the potatoes, carrots, celery, and onion as instructed.
  2. Combine Ingredients:
    • Once the beef is browned, add in the potatoes, carrots, celery, and onion to the pot.
    • Pour in the can of fried roasted tomatoes and add the frozen green beans.
    • Stir everything together to combine.
  3. Add Broth:
    • Pour in the box of broth into the pot. Make sure the broth covers all the ingredients. If needed, add a bit of water to ensure everything is submerged.
  4. Simmer:
    • Bring the stew to a boil, then reduce the heat to low. Let it simmer for about 20-25 minutes, or until the vegetables are tender.
  5. Serve:
    • While the stew is simmering, heat up the brown and serve rolls according to package instructions.
    • Prepare the tossed salad by washing and chopping the lettuce and tomato.
    • Serve the Poor Man’s Stew hot in bowls alongside the brown and serve rolls and tossed salad.
