Garlic Her bPork Sliders with Herb Roasted Potatoes

Ingredients:

For the Pork Sliders:

1 pound pre-cooked pork (such as leftover pork loin or pulled pork)
6 slider rolls
6 slices of cheese (cheddar, Swiss, or your choice)
3 tablespoons butter
2 cloves garlic, minced
1 teaspoon mixed dried herbs (such as thyme, rosemary, and oregano)
For the Herb Roasted Potatoes:

4 medium potatoes, cubed
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon seasoned salt
1 teaspoon dried thyme
Instructions:

Preheat the oven and air fryer: Preheat your oven to 350°F (175°C) and your air fryer to 400°F (200°C).

Prepare the Pork Sliders: Place the pre-cooked pork in a microwave-safe dish and heat it in the microwave for about 2 minutes or until warmed through. Meanwhile, slice the slider rolls in half. Spread the warmed pork evenly on the bottom halves of the rolls. Top each with a slice of cheese.

Make the Garlic Herb Butter: In a small saucepan, melt the butter over low heat. Add minced garlic and dried herbs, and cook for 1-2 minutes until fragrant. Remove from heat.

Assemble and Bake the Sliders: Brush the tops of the slider rolls with the melted garlic herb butter mixture. Place the assembled sliders on a baking sheet and bake in the preheated oven for about 8 minutes, or until the cheese is melted and the rolls are lightly toasted.

Prepare the Herb Roasted Potatoes: In a bowl, toss the cubed potatoes with olive oil, minced garlic, seasoned salt, and dried thyme until evenly coated. Transfer the seasoned potatoes to the basket of the air fryer. Cook at 400°F (200°C) for about 14 minutes, stirring halfway through, or until the potatoes are crispy and golden brown.

Serve: Once the sliders are baked and the potatoes are roasted, remove them from the oven and air fryer. Serve the garlic herb pork sliders alongside the herb roasted potatoes for a simple, fast, and delicious meal.
