  • 1 lb ground beef
  • 1/2 onion, chopped (optional)
  • 1 can (10 oz) Rotel diced tomatoes and green chilies
  • 1 box (12 oz) shells and cheese
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, plus extra for topping
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Prepare the Shells and Cheese: Cook the shells according to the package instructions. While the shells are cooking, prepare the cheese sauce according to the box instructions. For an extra creamy and cheesy texture, stir in the milk and 1 cup of shredded cheddar cheese into the cheese sauce. Mix until smooth and creamy. Set aside.
  2. Brown the Ground Beef: In a large skillet, brown the ground beef over medium-high heat, breaking it apart with a spoon as it cooks. If desired, add the chopped onion and cook until the onion is translucent and the beef is fully cooked. Drain any excess grease from the skillet.
  3. Add Rotel Tomatoes: Add the can of Rotel diced tomatoes and green chilies to the cooked ground beef. Stir well to combine. Let the mixture simmer for a few minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
  4. Combine Pasta and Hamburger Mixture: Once the Rotel and hamburger mixture is well combined, add the prepared shells and cheese to the skillet. Gently mix everything together until the pasta is evenly coated with the cheesy, meaty sauce.
  5. Serve: Transfer the cheesy Rotel hamburger pasta to a serving dish. If desired, sprinkle some extra shredded cheddar cheese on top. Garnish with chopped fresh parsley for a burst of color and freshness.
  6. Enjoy: Serve hot and enjoy your delicious and comforting Cheesy Rotel Hamburger Pasta! It’s a flavorful, hearty dish that’s sure to please your taste buds.

Q1: Can I use a different type of pasta for this recipe?

A1: Yes, you can definitely use a different type of pasta if you prefer. Penne, rotini, or bowtie pasta would work well with this recipe. Just follow the cooking instructions on the pasta package and adjust the cooking time accordingly.

Q2: Is Rotel the same as regular canned diced tomatoes?

A2: Rotel is a brand of canned tomatoes and green chilies, known for its slightly spicy flavor. If you don’t have Rotel on hand, you can use regular canned diced tomatoes and add a small can of diced green chilies or a pinch of red pepper flakes for a similar flavor profile.

Q3: Can I make this recipe ahead of time?

A3: While it’s best enjoyed fresh, you can prepare the components ahead of time. Cook and drain the pasta, brown the hamburger, and prepare the cheese sauce. Store them separately in airtight containers in the refrigerator. When ready to serve, reheat the hamburger and Rotel mixture in a skillet, then mix in the prepared shells and cheese. Add a little milk if needed to loosen up the sauce.

Q4: Can I freeze Cheesy Rotel Hamburger Pasta?

A4: Freezing may alter the texture of the dish, particularly the cheese sauce, making it grainy upon reheating. If you still wish to freeze leftovers, store them in an airtight container for up to 2-3 months. Thaw in the refrigerator overnight and reheat on the stovetop over low heat, stirring constantly and adding a splash of milk to help restore creaminess.

Q5: Can I make this recipe vegetarian?

A5: Absolutely! You can substitute the ground beef with plant-based crumbles or tofu crumbles for a vegetarian version. Ensure your cheese and shells and cheese box are vegetarian-friendly as well. Adjust the seasoning according to your taste preferences.

Q6: How can I make the dish spicier?

A6: If you prefer a spicier kick, you can add a pinch of red pepper flakes or a dash of your favorite hot sauce to the hamburger and Rotel mixture. You can also use hot or spicy varieties of Rotel diced tomatoes and green chilies for an extra heat level. Remember to taste as you go to achieve your desired level of spiciness.
