Garlic Butter Steak and Potatoes

Garlic Butter Steak and Potatoes

Ingredients:
4 sirloin steaks, about 1 inch thick
Salt and black pepper, to taste
2 lbs baby potatoes, halved
2 tbsp olive oil
4 cloves garlic, minced
4 tbsp unsalted butter
2 tbsp chopped fresh parsley

Instructions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Season the steaks with salt and black pepper, to taste.
In a large bowl, toss the halved potatoes with olive oil, salt, and pepper. Arrange the potatoes on the prepared baking sheet and bake for 20 minutes.
While the potatoes are baking, heat a large skillet over medium-high heat. Add the steaks to the skillet and cook for 3-4 minutes on each side, or until they are browned and cooked to your desired degree of doneness.
Remove the steaks from the skillet and set them aside to rest.
Add the minced garlic to the same skillet and cook for 30 seconds, or until fragrant. Stir in the butter until it has melted and combined with the garlic.
Place the cooked steaks on a serving platter and pour the garlic butter over the top.
Serve the steaks with the roasted potatoes and garnish with chopped parsley.
