Beef Rice a Roni Casserole with Creamy Mushroom Sauce


  • 2 boxes of beef Rice a Roni
  • 1 lb ground beef
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) cream of mushroom soup


  1. Prepare the Ground Beef:
    • In a large skillet, brown the ground beef over medium-high heat until fully cooked.
    • Once cooked, drain the excess fat and set the beef aside.
  2. Prepare the Rice a Roni:
    • In the same skillet used for the ground beef, prepare the beef Rice a Roni according to the instructions on the box.
    • However, use about half a cup less water than what’s indicated on the box to ensure a thicker consistency.
  3. Combine Ingredients:
    • After adding the rice and powder mix to the skillet, immediately add the cooked ground beef, drained corn, and cream of mushroom soup.
    • Stir well to combine all the ingredients evenly.
  4. Simmer:
    • Let the mixture simmer over medium heat for a few minutes, allowing the flavors to meld together and the sauce to thicken slightly.
  5. Serve:
    • Once everything is heated through and well combined, remove the skillet from the heat.
