Crockpot Creamy Beef Stroganoff

Ingredients:

  • 1.5 lbs beef stew meat, cubed
  • 8 oz fresh mushrooms, sliced
  • 1 packet onion soup mix
  • 2 cans (10.5 oz each) cream of mushroom soup
  • 4 oz cream cheese, softened
  • 2 tablespoons sour cream
  • Salt and pepper to taste
  • Jasmine rice, cooked, for serving
  • Steamed green beans, for serving

Instructions:

  1. Place the cubed beef stew meat, sliced mushrooms, and onion soup mix in the crockpot.
  2. Pour the cream of mushroom soup over the ingredients in the crockpot.
  3. Stir everything together until the ingredients are well combined.
  4. Cover and cook on low heat for 7 hours.
  5. After 7 hours, add the softened cream cheese and sour cream to the crockpot. Stir well to combine with the other ingredients.
  6. Cover and continue cooking on low heat for an additional 30 minutes, allowing the cream cheese to melt and incorporate into the sauce.
  7. Season with salt and pepper to taste.
  8. Serve the creamy beef stroganoff over cooked Jasmine rice, accompanied by steamed green beans.
