Creamy Broccoli Casserole
Ingredients:
- 1 (16 ounce) package frozen broccoli
- 1 (6 ounce) can condensed cream of celery soup
- 1 cup mayonnaise
- 1 cup shredded cheddar cheese
- 2 eggs, lightly beaten
- 1⁄2 cup cheese crackers
- 1-2 tablespoons instant minced onion or 1-2 tablespoons onion powder
- 1 tablespoon butter or margarine
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the frozen broccoli according to the package instructions and drain well.
- In a large mixing bowl, combine the condensed cream of celery soup, mayonnaise, lightly beaten eggs, shredded cheddar cheese, and instant minced onion or onion powder. Stir until well combined.
- Add the drained broccoli to the mixture and stir until the broccoli is evenly coated.
- Pour the broccoli mixture into a greased 1-1/2 quart baking dish, spreading it out evenly.
- In a small saucepan, melt the butter over low heat.
- Crush the cheese crackers and mix them with the melted butter until well combined.
- Sprinkle the buttered cracker crumbs evenly over the top of the broccoli mixture in the baking dish.
- Bake the casserole in the preheated oven for 45-55 minutes, or until the top is golden brown and the casserole is bubbly around the edges.
- Remove from the oven and let it cool for a few minutes before serving.
