Homemade Steak Fajitas

Ingredients:

  • 1 lb flank steak, thinly sliced against the grain
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • 8-10 flour tortillas
  • Optional toppings: salsa, guacamole, sour cream, shredded cheese, chopped cilantro

Instructions:

  1. In a large bowl, combine sliced flank steak with olive oil, minced garlic, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, and lime juice. Toss to coat the steak evenly. Allow the steak to marinate for at least 30 minutes in the refrigerator.
  2. Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated steak slices in a single layer, cooking for 2-3 minutes per side or until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.
  3. In the same skillet, add a bit more olive oil if needed, then add the sliced bell peppers and onions. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
  4. Return the cooked steak to the skillet with the vegetables, tossing everything together to combine. Cook for an additional 2-3 minutes to heat through.
  5. Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
  6. Serve the steak and vegetable mixture hot, alongside warm tortillas and optional toppings such as salsa, guacamole, sour cream, shredded cheese, and chopped cilantro.
