Grandma’s Chicken Noodle Casserole
Ingredients:
- 6 ounces egg noodles, cooked and drained
- 1 (10 ounce) can chunk chicken breast, drained (or store-bought rotisserie chicken)
- 1 (10 ounce) can cream of chicken soup
- 1/2 cup mayonnaise
- 1/2 cup milk (or water)
- 1/4 onion, finely diced
- 1 cup shredded cheddar cheese
- 3/4 cup frozen peas and carrots
- 1/2 cup panko bread crumbs
- 1/4 stick salted butter (2 tablespoons), melted
Instructions:
- Preheat the oven to 350°F (175°C). Spray an 8×8 baking dish with non-stick cooking spray.
- In a large bowl, combine the chunk chicken, cream of chicken soup, mayonnaise, milk (or water), diced onion, shredded cheese, and frozen peas and carrots. Stir until well combined.
- Gently fold in the cooked and drained egg noodles.
- Transfer the mixture to the prepared baking dish, spreading it evenly.
- Sprinkle the top with panko bread crumbs.
- Drizzle the melted butter evenly over the panko bread crumbs.
- Bake uncovered for about 25-35 minutes until the casserole is bubbly, and the top is golden brown.
- Allow the casserole to cool for a few minutes before serving.
