Peanut Butter Fudge Cake

Ingredients:

  • 2 cups sugar
  • 1 cup milk
  • 2 cups creamy peanut butter
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup boiling water

Instructions:

  1. Preheat the Oven: Preheat your oven to 350Β°F (175Β°C). Grease and flour a 9×13 inch baking pan.
  2. Prepare the Peanut Butter Fudge Mixture: In a large saucepan, combine the sugar and milk. Bring to a rapid boil over medium heat, stirring constantly. Boil for 2 and a half minutes. Remove from heat and stir in the vanilla extract and creamy peanut butter until smooth. Set aside to cool slightly.
  3. Make the Cake Batter: In a separate large mixing bowl, whisk together the flour, baking powder, and salt. Add the eggs and vegetable oil, then gradually stir in the boiling water until well combined.
  4. Combine the Mixtures: Pour the peanut butter fudge mixture into the bowl with the cake batter. Gently fold the two mixtures together until just combined. Be careful not to overmix.
  5. Bake the Cake: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
