Low-Carb Stuffed Italian Sausage Bake:

Ingredients:

  • 5 links of Italian sausage (sweet and hot, mixed if desired)
  • 5 string cheese sticks
  • 1 cup low-carb pasta sauce
  • Parmesan cheese, grated (optional)
  • Any veggies of your choice (e.g., spinach, bell peppers, onions)
  • Olive oil for greasing
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Grease a 9×9-inch baking pan with olive oil.
  2. Preparing the Sausages:
    • Carefully split each Italian sausage lengthwise without cutting all the way through the bottom, creating a pocket.
    • Insert a string cheese stick into the middle of each sausage.
  3. Adding Veggies:
    • If desired, add a layer of fresh veggies (such as spinach) to the bottom of the greased pan.
  4. Assembling and Baking:
    • Place the stuffed sausages on top of the veggies or directly in the pan.
    • Pour 1/2 cup of low-carb pasta sauce over the sausages and spread the remaining sauce on top.
    • Season with salt and pepper to taste.
    • Bake in the preheated oven for 30 minutes.
  5. Optional Cheese Topping:
    • If you want a cheesy crust, sprinkle grated Parmesan cheese on top of the sausages during the last 3 minutes of baking.
