Grandma’s Chicken Noodle Casserole

Ingredients:

  • 6 ounces egg noodles, cooked and drained
  • 1 (10 ounce) can chunk chicken breast, drained (or store-bought rotisserie chicken)
  • 1 (10 ounce) can cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/2 cup milk (or water)
  • 1/4 onion, finely diced
  • 1 cup shredded cheddar cheese
  • 3/4 cup frozen peas and carrots
  • 1/2 cup panko bread crumbs
  • 1/4 stick salted butter (2 tablespoons), melted

Instructions:

  1. Preheat the oven to 350°F (175°C). Spray an 8×8 baking dish with non-stick cooking spray.
  2. In a large bowl, combine the chunk chicken, cream of chicken soup, mayonnaise, milk (or water), diced onion, shredded cheese, and frozen peas and carrots. Stir until well combined.
  3. Gently fold in the cooked and drained egg noodles.
  4. Transfer the mixture to the prepared baking dish, spreading it evenly.
  5. Sprinkle the top with panko bread crumbs.
  6. Drizzle the melted butter evenly over the panko bread crumbs.
  7. Bake uncovered for about 25-35 minutes until the casserole is bubbly, and the top is golden brown.
  8. Allow the casserole to cool for a few minutes before serving.
