Hearty Crockpot Beef and Potato Stew
Ingredients:
- 1 lb ground beef
- 3-4 jumbo baking potatoes, peeled and diced
- 1 big container (32 oz) beef broth
- 1 can (14 oz) crushed tomatoes
- 1 can (10.75 oz) condensed tomato soup
- 1 can (15 oz) corn, drained
- 1 can (15 oz) peas, drained
- 1 can (15 oz) green beans, drained
- 1 huge scoop minced garlic
- A few squirts Worcestershire sauce
- 1 packet McCormick beef stew seasoning
- Garlic salt, to taste
- Onion powder, to taste
- Pepper, to taste
- Parsley, for garnish
- Ranch seasoning, to taste
Instructions:
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Peel and dice the baking potatoes into bite-sized cubes.
- In a large crockpot, combine the cooked ground beef, diced potatoes, beef broth, crushed tomatoes, condensed tomato soup, corn, peas, green beans, and minced garlic.
- Add a few squirts of Worcestershire sauce for depth of flavor.
- Sprinkle the McCormick beef stew seasoning over the ingredients in the crockpot.
- Season to taste with garlic salt, onion powder, pepper, and ranch seasoning. Adjust the seasonings according to your preferences.
- Mix all the ingredients in the crockpot thoroughly to ensure even distribution of flavors.
- Cover the crockpot with a lid and cook on low for 8 hours or until the potatoes are tender.
- Before serving, taste and adjust the seasoning if necessary. Sprinkle parsley on top for a fresh garnish.
