Cheesy Burrito Bake

Ingredients:

  • 6 frozen burritos (bean & beef kind)
  • 1 cup heavy whipping cream (or 1 cup sour cream)
  • 1 can cream of chicken soup
  • 1 tablespoon taco seasoning (optional, adjust to taste)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Cooking spray (for greasing)
  • Fresh cilantro, chopped (for garnish, optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350Β°F (175Β°C).
  2. Prepare Mixture: In a mixing bowl, combine heavy whipping cream, cream of chicken soup, and taco seasoning (if using). Mix until well combined.
  3. Layering: Grease a 9×13-inch baking dish with cooking spray. Spread a thin layer of the cream mixture on the bottom of the dish. Place the frozen burritos on top of the mixture in a single layer.
  4. Pour and Sprinkle: Pour the remaining cream mixture evenly over the burritos, ensuring they are well covered. Sprinkle shredded cheese generously over the top.
  5. Cover and Bake: Cover the baking dish with aluminum foil. Bake in the preheated oven for 30 to 40 minutes or until the burritos are heated through, and the cheese is melted and bubbly.
  6. Finish and Serve: Remove the foil during the last 10 minutes of baking to allow the cheese to get golden brown. Once done, let it rest for a few minutes before serving. Garnish with fresh chopped cilantro if desired.
  7. Serve and Enjoy: Serve the Cheesy Burrito Bake hot, either on its own or with your favorite toppings such as salsa, guacamole, or sour cream.

This recipe transforms simple frozen burritos into a comforting and cheesy casserole that’s easy on the budget. Feel free to customize by adding ingredients like diced onions, black beans, or corn to suit your taste preferences.
