Cheap dinner that will last a few nights…Prepare one box of Rice a Roni Spanish rice as directed on the box. In a large skillet brown 1 lb lean ground beef, chopped onions, chopped red and green bell peppers. Add a sprinkle of shredded cheese, 1 can of Rotel, salt pepper and cumin. Combine all together along with the prepared rice. Pour into a baking dish and top with additional shredded sharp cheddar cheese and bake at 350 Β° for 25- 30 minutes
