Air Fryer Popcorn Chicken with Broccoli Stir Fry
Ingredients:
- 1 bag of popcorn chicken
- 1 cup minute brown rice (or boil-in-bag instant brown rice)
- 1 cup broccoli florets
- 1/2 cup stir fry sauce
- Cooking spray
Instructions:
- Prepare the Popcorn Chicken:
- Preheat your air fryer to 400°F (200°C).
- Place the popcorn chicken in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.
- Cook the popcorn chicken in the air fryer according to the package instructions until golden brown and crispy, typically around 10-12 minutes. Shake the basket halfway through cooking for even crisping.
- Cook the Rice:
- Prepare the minute brown rice according to the package instructions or boil-in-bag instant brown rice by boiling it in water for the specified time.
- Steam the Broccoli:
- While the popcorn chicken is cooking, steam the broccoli florets until tender. You can steam them in a steamer basket on the stovetop or in the microwave with a little water in a microwave-safe dish covered with plastic wrap.
- Combine and Serve:
- Once everything is cooked, transfer the cooked popcorn chicken to a serving dish.
- In a large skillet or wok, heat the stir fry sauce over medium heat until warmed through.
- Add the cooked rice to the skillet with the stir fry sauce and toss to coat evenly.
- Add the steamed broccoli to the skillet and toss everything together until the broccoli is coated in the sauce and heated through.
- Serve the popcorn chicken alongside the broccoli stir fry rice. Optionally, garnish with sesame seeds or sliced green onions for extra flavor.
