Mix -Jiffy corn mix
14.5 oz can cream of corn
1/2 cup milk
1 Cup of shredded cheddar cheese and two eggs bake at 400 degrees for 20 minutes!
While that’s cooking brown
1 pound of ground beef
2 cloves of garlic
Drain fat return to pan and add 1 packet of taco seasoning and 3/4 cup of water
Once that thickens
Add 1/2 a 10 oz can of red enchilada sauce and stir
Once the corn bread is ready poke holes in it add the rest of the enchilada sauce and top with ground beef mixture and 2 cups of shredded cheddar or Mexican cheese!
Add back to oven 15 minutes and then top with desired topping
And sour cream!!
