California Sushi Roll Bowl Recipe

Ingredients:

  • $2.99 imitation crab 🦀
  • $2.99 mini cucumbers 🥒
  • $0.89 green onions
  • $1.39 rice 🍚
  • $0.97 avocado 🥑
  • Had at home: Mayo, sriracha, sesame seeds, rice vinegar

Sauce:

  • Mayo
  • Sriracha
  • Water (to thin)

Instructions:

  1. Cook the rice according to package instructions. Once cooked, mix in 1-2 tablespoons of rice vinegar to give it a sushi rice flavor.
  2. While the rice is cooking, prepare the sauce. In a bowl, combine mayo and sriracha to your desired spice level. Start with a few spoonfuls of mayo and adjust the sriracha according to your taste. Add a little water and stir until the sauce reaches a drizzly consistency. Set aside.
  3. Slice the mini cucumbers into thin rounds. Chop the green onions.
  4. Cut the avocado into slices.
  5. In a large bowl, assemble the sushi bowls. Start with a base of sushi rice, then add the imitation crab, sliced mini cucumbers, chopped green onions, and avocado slices.
  6. Drizzle the spicy mayo sauce over the top of each bowl.
  7. Sprinkle sesame seeds on top for added texture and flavor.
  8. Optionally, garnish with extra green onions and a squeeze of lime if desired.
  9. Toss everything gently to combine the flavors.
  10. Serve immediately and enjoy your delicious and affordable California Sushi Roll Bowls!
