Smoked Sausage and Purple Potato Sauté with Fresh Green Beans

Ingredients:

1 pound smoked sausage, sliced
4 cups purple potatoes, washed and diced (or any preferred potato variety)
2 cups fresh green beans, trimmed and cut into bite-sized pieces
2 tablespoons cooking oil (vegetable or olive oil)
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon Slap Ya Mama Cajun seasoning (adjust to taste)
Salt and pepper to taste
Instructions:

Prepare the Ingredients:

Slice the smoked sausage into rounds.
Wash and dice the purple potatoes (or preferred potato variety).
Trim the ends of the fresh green beans and cut them into bite-sized pieces.
Brown the Sausage:

In a large skillet or pan, brown the sliced smoked sausage over medium-high heat until it develops a golden-brown color. This should take about 5-7 minutes.
Sauté Potatoes and Green Beans:

Add the cooking oil to the skillet and let it heat up.
Once the oil is hot, add the diced purple potatoes and fresh green beans to the skillet.
Sprinkle the onion powder, garlic powder, and Slap Ya Mama Cajun seasoning over the potatoes and green beans. Mix well to evenly coat the vegetables.
Cook Until Golden and Fragrant:

Allow the potatoes and green beans to cook undisturbed for a few minutes until you hear them sizzling. This will help them develop a golden crust.
Flip the vegetables a few times to ensure even cooking and browning.
Simmer:

Reduce the heat to low, cover the skillet with a lid, and let the dish simmer. This will allow the flavors to meld, and the vegetables to cook through.
Cook for an additional 10-15 minutes or until the potatoes are fork-tender and the green beans are cooked to your liking.
Adjust Seasoning and Serve:

Taste the dish and adjust the seasoning with salt, pepper, or additional Cajun seasoning if needed.
Serve the smoked sausage and purple potato sauté hot, garnished with fresh herbs if desired.
Enjoy this affordable and simple smoked sausage and purple potato sauté with the delightful addition of fresh green beans
