Quick Teriyaki Chicken Stir Fry:

Ingredients:

  1. 1 lb (about 450g) boneless, skinless chicken breasts, cubed
  2. 1 tablespoon cooking oil (vegetable or canola oil)
  3. 1/2 teaspoon salt
  4. 1/4 teaspoon black pepper
  5. 1/2 teaspoon garlic powder
  6. 1/2 teaspoon onion powder
  7. 1/4 teaspoon red pepper flakes (adjust to taste)
  8. 1 bag (16 oz) frozen stir fry vegetables
  9. 1 cup teriyaki sauce (use your favorite brand)
  10. Cooked white rice for serving

Instructions:

  1. Prepare the Chicken:
    • In a large skillet or wok, heat the cooking oil over medium-high heat.
    • Add the cubed chicken to the hot oil, season with salt, black pepper, garlic powder, onion powder, and red pepper flakes.
    • Sauté the chicken until fully cooked and browned on the outside, stirring occasionally. This should take about 5-7 minutes.
  2. Add Frozen Vegetables:
    • Once the chicken is cooked, add the entire bag of frozen stir fry vegetables to the skillet. Stir well to combine.
    • Continue cooking for an additional 3-5 minutes or until the vegetables are heated through and tender, but still crisp.
  3. Teriyaki Sauce:
    • Pour the entire bottle of teriyaki sauce over the chicken and vegetables. Stir to ensure everything is coated evenly.
    • Let it simmer for an additional 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  4. Serve:
    • Spoon the teriyaki chicken stir fry over a bed of cooked white rice.
  5. Garnish (Optional):
    • Garnish with sliced green onions, sesame seeds, or additional red pepper flakes for added flavor and presentation.
  6. Enjoy:
