Ingredients:

  • 3 small cans of chunk chicken, drained and rinsed
  • Butter
  • Pepper, garlic powder, onion powder, paprika, Montreal steak seasoning (to taste)
  • 1 can of drained green chilies
  • Frozen vegetables (about 1 cup)
  • 1 can cream of chicken soup
  • Milk (to desired consistency)
  • Rice (1/5 of a $2.58 bag, cooked)
  • Cheddar Biscuits (store-bought or homemade)

Instructions:

  1. In a large skillet, melt butter over medium heat.
  2. Add drained and rinsed chunk chicken to the skillet. Season with pepper, garlic powder, onion powder, paprika, and Montreal steak seasoning according to your taste preferences.
  3. Once the chicken is cooked to your liking, add drained green chilies to the skillet and let it cook for a while.
  4. Add frozen vegetables to the skillet, cover with a lid, and reduce heat. Cook until the vegetables are no longer frozen.
  5. Pour in the cream of chicken soup and add milk gradually until you achieve the desired creamy consistency. Stir well and let it simmer.
  6. In a separate pot, cook the rice according to package instructions.
  7. Serve the creamy chicken and vegetable mixture over the cooked rice.
  8. Optionally, prepare Cheddar Biscuits according to the package instructions or your favorite recipe.
