My grandpa’s recipe

My grandpa’s recipe…so yummy! Microwave pecan or peanut brittle. Strongly recommend a microwave bowl with a handle. Makes it so much easier!


1 cup sugar, 1/2 cup white corn syrup (any brand), 1 cup (or more) pecans or peanuts, 1 tsp salt, 1 tsp real butter, 1 tsp baking soda, 1 tsp vanilla (real or imitation), 1 tsp salt.


Combine sugar and corn syrup in a large Pyrex (microwavable) bowl. Microwave 3 minutes. Add nuts and salt, stir (will be very very sticky so work fast) and microwave 3 more minutes. Add butter and vanilla and microwave an additional 90 seconds.

Sprinkle baking soda on top and mix using a folding style. It is extremely hot and will foam a lot! Pour immediately onto a well greased (i sprayed mine with Pam) cookie sheet.

Place cookie sheet up on two cups or a cooling rack for quicker cooling. Let cool and the break up into pieces. You may have to adjust cooking time for you wattage microwave.
