Microwave Peanut Brittle

Ingredients:

  • 1 cup white sugar
  • 1/2 cup light corn syrup
  • 1 cup salted peanuts
  • 1 teaspoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions:

  1. Prepare a cookie sheet by greasing it with butter or cooking spray.
  2. In a 2-quart glass bowl, combine the white sugar and corn syrup.
  3. Microwave the sugar-corn syrup mixture on high for 4 minutes.
  4. Carefully remove the bowl from the microwave and stir in the salted peanuts.
  5. Return the bowl to the microwave and microwave on high for an additional 3 1/2 minutes.
  6. Once done, remove the bowl again and stir in the butter and vanilla extract.
  7. Microwave the mixture for another 1 1/2 minutes.
  8. Remove the bowl from the microwave and quickly stir in the baking soda until the mixture becomes light and foamy.
  9. Immediately pour the mixture onto the prepared cookie sheet and spread it out thinly using a spatula.
  10. Allow the peanut brittle to cool completely at room temperature.
  11. Once cooled, break the peanut brittle into pieces.
  12. Serve and enjoy your homemade microwave peanut brittle!
