Microwave Peanut Brittle
Ingredients:
- 1 cup white sugar
- 1/2 cup light corn syrup
- 1 cup salted peanuts
- 1 teaspoon butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions:
- Prepare a cookie sheet by greasing it with butter or cooking spray.
- In a 2-quart glass bowl, combine the white sugar and corn syrup.
- Microwave the sugar-corn syrup mixture on high for 4 minutes.
- Carefully remove the bowl from the microwave and stir in the salted peanuts.
- Return the bowl to the microwave and microwave on high for an additional 3 1/2 minutes.
- Once done, remove the bowl again and stir in the butter and vanilla extract.
- Microwave the mixture for another 1 1/2 minutes.
- Remove the bowl from the microwave and quickly stir in the baking soda until the mixture becomes light and foamy.
- Immediately pour the mixture onto the prepared cookie sheet and spread it out thinly using a spatula.
- Allow the peanut brittle to cool completely at room temperature.
- Once cooled, break the peanut brittle into pieces.
- Serve and enjoy your homemade microwave peanut brittle!
