My kids love the Little Bites mini muffins but it’s almost $3 for a box of 5 pouches containing 4 muffins & they last like 2 days in my house.Β πŸ˜’Β so i started getting bags of muffin mix (.86) and making them with my mini Bundt cake maker & i can get 50 mini muffins out of one bag of mix! There’s a lot of choices of flavors too witch is another plus!
The mini Bundt cake maker is from walmart and was less than $10!

Homemade Mini Bundt Cake Mix Muffins

Ingredients:

  • 1 bag (about 7.5 ounces) of your favorite muffin mix
  • Water, as per the mix instructions
  • Vegetable oil, as per the mix instructions
  • 2 large eggs, as per the mix instructions
  • Non-stick cooking spray
  • Optional: Mini chocolate chips, blueberries, or chopped nuts for extra flavor

Equipment:

  • Mini Bundt cake maker
  • Mixing bowl
  • Whisk or spoon
  • Measuring cup

Instructions:

  1. Preheat the Mini Bundt Cake Maker:
    • Plug in and preheat your mini Bundt cake maker according to the manufacturer’s instructions.
  2. Prepare the Muffin Mix:
    • In a mixing bowl, combine the muffin mix, water, vegetable oil, and eggs according to the instructions on the muffin mix package. Stir until well combined.
  3. Add Optional Ingredients:
    • If you want to enhance the flavor, fold in a handful of mini chocolate chips, blueberries, or chopped nuts into the batter.
  4. Grease the Mini Bundt Cake Maker:
    • Lightly coat the cavities of the mini Bundt cake maker with non-stick cooking spray to ensure the muffins release easily.
  5. Fill the Cavities:
    • Spoon the muffin batter into each cavity of the mini Bundt cake maker, filling them about two-thirds full. Be careful not to overfill to avoid spillage during cooking.
  6. Cook the Mini Muffins:
    • Close the lid of the mini Bundt cake maker and cook the muffins according to the appliance instructions. Usually, it takes about 3-5 minutes for mini muffins to cook thoroughly.
  7. Check for Doneness:
    • Open the lid and check the muffins for doneness. They should be golden brown and a toothpick inserted into the center should come out clean.
  8. Cool and Serve:
    • Carefully remove the mini muffins from the Bundt cake maker and allow them to cool on a wire rack for a few minutes.
  9. Repeat the Process:
    • Repeat the filling and cooking process until you’ve used up all the batter. This recipe should yield approximately 50 mini muffins.
  10. Enjoy:
    • Serve the mini muffins warm with a glass of milk or pack them in lunchboxes for a delightful treat. Store any leftovers in an airtight container.
