My husband has a love for uncrustables from childhood. There’s no way I’m paying that much for them tho so homemade it is. They were super cheap and easy to make. If you put peanut butter on both sides of the bread it makes sure that jelly doesn’t leak through. Throw them in a ziploc freezer bag and they are so easy to pack in lunches. My toddlers love them too. I don’t have school age kids but these would be great for school lunches too.

Homemade Peanut Butter and Jelly Uncrustables

Ingredients:

  • Bread slices (white, whole wheat, or your preferred choice)
  • Creamy peanut butter
  • Fruit jelly or jam (strawberry, grape, or your favorite flavor)
  • Ziploc freezer bags

Instructions:

  1. Prepare the Bread:
    • Lay out the desired number of bread slices on a clean surface.
    • Using a round cookie cutter or a glass, cut out circles from the bread. Aim for an even number of circles.
  2. Apply Peanut Butter:
    • Spread a layer of creamy peanut butter on one side of each bread circle.
    • Ensure you cover the entire surface, especially the edges, to prevent the jelly from leaking.
  3. Add Jelly:
    • Spoon a small amount of fruit jelly or jam onto the center of half of the peanut butter-covered bread circles.
  4. Assemble the Uncrustables:
    • Take the remaining peanut butter-covered bread circles and place them on top of the jelly-covered ones, creating sandwich-like pairs.
  5. Seal the Edges:
    • Press down the edges of the bread circles to seal the sandwiches. You can use the back of a fork to create a decorative edge and ensure a good seal.
  6. Freeze for Later:
    • Place the assembled uncrustables in a single layer on a baking sheet and transfer them to the freezer for about 1-2 hours or until firm.
    • Once frozen, transfer them to a Ziploc freezer bag, separating each sandwich with parchment paper to prevent sticking.
  7. Pack for Lunch:
    • When packing lunches, take the desired number of uncrustables from the freezer bag and place them in lunch containers or directly into lunch bags.
  8. Enjoy:
    • Uncrustables can be enjoyed straight from the freezer or allowed to thaw for a few minutes before eating.
