Lazy Taters: Cheesy Potato Casserole
Ingredients:
- 2 boxes au gratin or scalloped potatoes with sauce packets
- 2 cups hot water
- 2 cups milk
- 1 can cream of chicken soup
- 1 can of corn, drained
- 1 package diced ham or smoked sausage
- Salt and pepper to taste
- 1 cup shredded cheese (optional, for extra cheesiness)
- 1 teaspoon chicken Better than Bouillon (optional)
Instructions:
- Prepare Ingredients:
- Open the boxes of au gratin or scalloped potatoes and remove the sauce packets.
- Dice the ham or sausage if not already diced.
- Drain the can of corn.
- Mix Liquid Ingredients:
- In a large mixing bowl, combine the hot water, milk, and the sauce packets from the potato boxes. Whisk until well mixed.
- If using, dissolve the chicken Better than Bouillon in this liquid mixture.
- Assemble:
- In a slow cooker, layer half of the potato slices from one box on the bottom.
- Sprinkle half of the diced ham or sausage over the potatoes.
- Pour half of the liquid mixture over the potatoes and meat.
- Repeat the layers with the remaining potatoes and meat.
- Add Extras:
- Stir in the drained corn evenly throughout the layers.
- Season the layers with salt and pepper to taste. Remember, the other ingredients may already have salt, so adjust accordingly.
- Cook:
- Set the slow cooker on high heat.
- Cover and cook for 4 hours. Avoid lifting the lid during cooking to maintain heat.
- Cheese (Optional):
- If desired, sprinkle shredded cheese over the top of the casserole during the last 30 minutes of cooking. Let it melt and become bubbly.
- Serve:
- Once cooked, serve the Lazy Taters hot, either as a main dish or a hearty side.
