Ham and Cheese Tater Tot Breakfast Casserole
Ingredients:
- 1 ham steak (about 1 lb), diced
- 1 small onion, chopped
- 1 cup grated cheese (cheddar or your preferred type)
- 2 slices American cheese, torn into pieces
- 4 cups frozen tater tots, thawed and broken into smaller pieces
- 9 large eggs
- 1 cup half and half
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C). Butter a casserole dish and set it aside.
- In a mixing bowl, combine the diced ham and chopped onion. Spread this mixture evenly in the buttered casserole dish.
- Sprinkle the grated cheese over the ham and onion mixture. Tear the American cheese slices into smaller pieces and distribute them evenly over the grated cheese layer.
- Spread the broken tater tots evenly over the cheese layer.
- In another mixing bowl, whisk together the eggs and half and half until well combined. Season with salt and pepper to taste.
- Pour the egg mixture over the ham, onions, cheese, and tater tots in the casserole dish.
- Tear another slice of cheese into pieces and sprinkle them over the top of the casserole.
- Season the top of the casserole with additional pepper if desired.
- Place the casserole dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
- Once done, remove from the oven and let it cool for a few minutes before serving.
