Cheesy Taco Pasta

8 oz. pasta (such as fusilli or penne)
1 lb. ground beef
1 onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
1 packet taco seasoning
1 can diced tomatoes, drained
1 cup water
1 cup shredded cheddar cheese
Salt and pepper to taste
Cook pasta, drain, and set aside.
Brown beef in a skillet.
Add onion, red bell pepper, and garlic. Cook until softened.
Stir in taco seasoning and cook for another minute.
Add tomatoes and water. Simmer until the sauce thickens.
Add cooked pasta and shredded cheese. Cook until the cheese melts.
Season with salt and pepper.
