Cheesy Appalachian Potato Cakes
Ingredients:
- 2 cups leftover mashed potatoes
- 1 egg
- 1/4 cup all-purpose flour
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- Salt and pepper to taste
- Optional: chopped green onions for garnish
- Optional: sour cream or syrup and butter for serving
Instructions:
- Prepare the Mixture:
- In a mixing bowl, combine the leftover mashed potatoes, egg, flour, shredded cheese, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Form the Potato Cakes:
- Heat a non-stick skillet or griddle over medium heat.
- Take a small handful of the potato mixture and form it into a patty shape, about 1/2 inch thick. Repeat with the remaining mixture, forming as many potato cakes as desired.
- Cook the Potato Cakes:
- Place the potato cakes onto the preheated skillet or griddle, cooking them in batches if necessary.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Serve:
- Once cooked, remove the potato cakes from the skillet and place them on a serving plate.
- Garnish with chopped green onions if desired.
- Serve hot with a dollop of sour cream on top, or if preferred, with syrup and butter for a sweet twist.
