My kids have a newfound love for potato skins. They are such a pain to bake and scoop out the insides, so I found a new way.
Scrub potatoes and slice about 1/2 inch thick. Toss in a bag with oil, salt and pepper. Bake for 20 minutes at 400 degrees. Flip after 10 minutes.
