Marry Me Chicken

Marry Me Chicken is a savory and creamy chicken dish typically made with bone-in, skin-on chicken thighs or breasts, cooked in a creamy tomato sauce with herbs and garlic. It’s named “Marry Me Chicken” because it’s so delicious that some people humorously claim it could make someone propose marriage after tasting it. While the traditional recipe calls for bone-in, skin-on chicken, you can use boneless, skinless chicken thighs or breasts if you prefer. Just adjust the cooking time accordingly as boneless chicken cooks faster.

To make the creamy tomato sauce, you typically start by sautéing garlic and sun-dried tomatoes in olive oil. Then, add chicken broth, heavy cream, parmesan cheese, and Italian seasoning. Simmer the sauce until it thickens and becomes creamy.

The reason i love this dish is you can makeit  ahead of time and reheat it when you’re ready to serve. The flavors tend to meld together even more when reheated, making it a great make-ahead dish,  the creamy sauce may separate slightly upon thawing and reheating. It’s best enjoyed fresh, but if you plan to freeze leftovers, store them in an airtight container for up to 2-3 months.

if you’re vegan you can make  you can make a vegetarian version of Marry Me Chicken by using plant-based chicken substitutes or tofu and vegetable broth instead of chicken. Adjust the ingredients and seasonings accordingly to suit your taste.

Ingredients:
6 Chicken Thighs
Use ALL seasonings to your liking
Onion powder
Garlic powder
Cajun seasoning
Pepper
Paprika
Italian herbs
Olive oil


Sauce
2 tbsp Butter
2 Tbsp fresh minced Garlic
1/2cup Chicken broth
1/3 cup Heavy whipping cream
Sun-dried Tomatoes
1 Tbsp White cooking wine
1/2 cup Fresh Shredded Parmesan or Italian cheese
Salt
Pepper
Italian herbs


Season & pan-sear Chicken thighs on both sides with w/olive oil in a skillet. Transfer to separate Pan. In the same skillet start your sauce. Add butter & garlic, and cook for about 3 mins. Add chicken broth, sun-dried tomatoes, and whipping cream. Add seasoning and allow to simmer. Add your cheese while constantly stirring. Pour sauce over chicken and bake in the oven for 30-35min at 400 degrees. Serve over Mashed Potatoes
