Ingredients:

  • Chuck roast
  • Salt, pepper, garlic powder (for seasoning)
  • Large white onion
  • Minced garlic
  • 2 tablespoons butter
  • Can of Rotel
  • Cayenne, cilantro, paprika, chili pepper, cumin (for seasoning)
  • Bay leaf
  • 2 cups beef broth
  • Tortillas
  • Monterey Jack cheese

Instructions:

  1. Sear the chuck roast and season with salt, pepper, and garlic powder.

  3. Saute a large white onion with minced garlic and butter; pour it over the roast.
