  • 2 boneless, skinless chicken breasts
  • Sea salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 medium red onion, diced
  • 2 large avocados, diced
  • 1 cup corn kernels (frozen, thawed)
  • 12 oz grape tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes


  1. Season the chicken breasts with sea salt and black pepper on both sides.
  2. In a skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook until golden brown on the outside and cooked through, approximately 6-8 minutes per side. Ensure the internal temperature reaches 165°F (74°C).
  3. While the chicken is cooking, prepare the fresh ingredients. Dice the red onion, avocados, and halve the grape tomatoes. Microwave the frozen corn according to the package instructions to thaw it.
