Avocado Lime Chicken Bowl
Ingredients:
- 2 boneless, skinless chicken breasts
- Sea salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 medium red onion, diced
- 2 large avocados, diced
- 1 cup corn kernels (frozen, thawed)
- 12 oz grape tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
Instructions:
- Season the chicken breasts with sea salt and black pepper on both sides.
- In a skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook until golden brown on the outside and cooked through, approximately 6-8 minutes per side. Ensure the internal temperature reaches 165°F (74°C).
- While the chicken is cooking, prepare the fresh ingredients. Dice the red onion, avocados, and halve the grape tomatoes. Microwave the frozen corn according to the package instructions to thaw it.
- In a large bowl, combine the diced red onion, avocados, thawed corn, halved grape tomatoes, and chopped cilantro.
- Squeeze the juice of two limes over the ingredients in the bowl. Toss the mixture gently to combine, ensuring the lime juice coats all the ingredients.
- Once the chicken is cooked, let it rest for a few minutes before cutting it into bite-sized pieces.
- Add the cut chicken pieces to the bowl with the diced vegetables and gently toss everything together until well combined.
- Taste and adjust the seasoning if needed, adding more salt, pepper, or lime juice according to your preference.
- Serve immediately and enjoy this delicious and nutritious Avocado Lime Chicken Bowl!
